Fresh Asparagus is one of spring's great pleasures, and roasting it is one of its easiest and most satisfying preparations.
When asparagus is in season in May and June, be sure to get it as fresh as you can.
Yield
4 Servings
Preparation time
20 minutes
Ingredients
1 lbAsparagus (as fresh as possible)
2 TOlive oil
1 TCoarse Sea Salt
Instructions
Preheat oven to 400.
Trim the bottoms of the asparagus so they will fit neatly in a baking pan.
Put the olive oil and salt in the baking pan and spread it around. You can add a crushed garlic clove if you like. This brings out the earthiness of the fresh asparagus.
Either roll the asparagus in the salted oil, or just lay it on top, depending on how seasoned you want it. If it's supermarket asparagus, then you may as well roll it.
Roast the asparagus for 18-20 minutes. Serve hot. You can use the hot salty oil as an optional dressing.
