Chestnuts Braised with Thyme

Chestnuts braised with thymeThis is a delicious cool-weather dish to accompany a rich meat dish, or just on its own. It's a classic accompaniment to roast goose, and it's fine with roast turkey, too, especially for a holiday table!

You can get perfectly good chestnuts in a jar, so there is no need to go through the tedious and finger-tearing process of peeling whole chestnuts.

Ingredients
1 1⁄2 T Butter (Unsalted)
15 oz Chestnuts (peeled, in a jar)
2 c Vegetable Stock
1 Bay Leaf
1 Thyme sprig
1 Celery rib
Instructions
  1. Preheat oven to 425.
  2. In a skillet or pan with a cover just big enough to hold the chestnuts, melt the butter and cook the chestnuts for a minute or so, to warm them.
  3. Add the stock, bay leaf, thyme, and celery.
  4. Stir gently, then put in the oven for 45 minutes.
  5. Add salt and pepper as needed and serve hot.
