Swedish comfort-food for those long winters... Swedish baked beans are similar to Boston Baked Beans, but different enough to be worth exploring, especially during the winter evenings after Christmas while we wait for spring.

Ingredients
2 cMarifax Beans (dried)
2 ozMaple Syrup
2 ozCider Vinegar
1⁄4 cLight Brown Sugar
1 tground ginger
Instructions
Place beans in large pot with water to cover by 2 inches. Soak at least 8 hours or overnight.
Drain beans and add fresh water to cover. Cook until just tender, 1-1/2 to 2 hours.
Use potato masher to smash some of beans.
Add vinegar, maple syrup, brown sugar and ground ginger to beans. Bring to a simmer, and cook another 30 minutes.
Season to taste with salt and black pepper. Serve hot.
Notes
The original recipe called for dark corn syrup, but let's use maple syrup. It's not like the vikings used corn syrup!
