This is a delicious side dish to accompany roast chicken or pork. I use the frozen pearl onions, the plain kind with no sauce, because this is so easy that it can be part of a dinner after a hard day.

Ingredients
12 ozfrozen Pearl Onions
2 TButter
2 ozChicken Stock
1⁄2 tDried Tarragon
Instructions
Preheat oven to 375.
In an oven-safe skillet, melt the butter.
Add the onions and stir them around to coat them with the butter.
Stir in the stock and tarragon, and salt if needed.
Bake for 20-25 minutes, stir it all well, and bake for another 20 minutes, or until the onions are tender.
