It took some diligence and a well-planned expedition deep into the heart of Western Maine, but I finally bagged a Red Snapper in its native habitat. The Red Snapper is rare, maybe even endangered, and becoming more so. This fine specimen was found in a steam box at a gas station in Bethel. I expect eager phone calls from the American Museum of Natural History at any time.
How red is a Red Snapper? Like a candied apple. What makes it red? Red #40 in the casing. That's it. A taste test of the two shown here by the finest taste buds in New England was impossible because most sensible people steer clear of this particular delicacy. So your humble Pilgrim analyzed it as best he could and found no difference whatsoever in a (thankfully) blind taste test. It's no worse than a standard supermarket dog (Kayem makes both kinds), but not as good as a Hebrew National.
