I had a great deal on pork loin, so naturally I bought more than I needed.
I'm glad I did! I found a handful of great pork recipes from [[nodetitle:The Blue Danube Cookbook]] and this is the first of them, a simple roast pork loin accented with caraway seed and marjoram.
- Preheat oven to a very slow 250 degrees.
- Set the meat on a board and score the fat with a sharp knife into diamonds. Then rub it with kosher salt and then sprinkle it with marjoram and caraway seeds.
- Roast in the slow oven for three hours.
- Remove from the oven when tender and let cool before carving.
