Orange Sauce for Sicilian Fish

This is a revelation with the Pistachio-Crusted Swordfish, but it's also great with other oily predator fish.

Preparation time
5 minutes
Ingredients
2 c Orange Juice
1⁄2 c Dry Vermouth
2 T Lemon Juice
2 T Honey
2 Fresh thyme sprigs
Instructions
Boil together all ingredients, reduce until thick enough to coat a spoon. Discard the thyme sprigs and spoon onto each plate. Add sea salt to taste.
