This hearty and unusual (to us) Swedish fish-rice pudding is a real winter rib-sticking side dish that is easy to make and stores well. I plan to make it at least once every winter.

Ingredients
1 lbSalt Cod (freshened)
1 crice (washed)
2 cWater
3 cMilk
2Eggs
3 TButter (Unsalted)
2 tSugar
1⁄2 tWhite Pepper
Instructions
Soak cod in cold water overnight, then drain.
Preheat oven to 375 degrees F.
Cook in fresh water until done, then bone and and chop finely.
Wash rice and put on to boil in cold water, then add milk and simmer until rice is almost soft.
Add butter and leave until cool. Add fish, seasonings and eggs.
Pour into buttered and bread crumbed baking dish. Sprinkle with fine bread crumbs and bake about 1 hour.
