Apple Clafoutis

Apple Clafoutis

Oh my...this was easy, and yummy!

It's essentially a stack of sliced, seasoned apples with a thin batter poured over it and baked. That's it. But with the right ingredients and with a light hand on the flame, you end up with that most brilliant of inventions - simple, economical, attractive, and delicious!

Remember: Shave every day with Occam's Razor. The simplest solution is probably the right one. The apple clafoutis is elegantly simple, and utterly delicious.

Ingredients
3 c Apples (peeled and sliced)
1⁄8 t Salt
1 T Vanilla extract
3 Eggs
1 c Milk
1⁄8 t Cinnamon
2⁄3 c Sugar
1⁄4 c Brandy
4 T Butter (Unsalted)
2⁄3 c Flour
Instructions
  1. Saute the apples in the butter until they begin to brown.
  2. Add half of the sugar and all of the cinnamon and brandy. Turn off the heat. Let sit for 30 minutes.
  3. Preheat the oven to 350.
  4. Whip together in a mixer or a blender the milk, the other half of the sugar, the eggs, vanilla, salt, and flour.
  5. Drain the apples and add the liquid to the batter.
  6. Put a buttered Pyrex pie plate or a metal cake pan over moderate heat. Pour in a thin layer of the batter and cook until it sets.
  7. Remove from heat and add the apples.
  8. Add the rest of the batter and smooth the top with a spoon.
  9. Bake for about an hour, or until a knife inserted into the center comes out clean.
