Cream-Cheese Pastry

Description
A delicious sweet Russian pastry for pies.
Yield
1 two-crust pie
Preparation time
1 hour
Ingredients
2 c Pastry Flour
1⁄3 c Sugar
1⁄8 t Salt
12 T Butter (Unsalted) (chilled and chopped)
6 oz Cream cheese (at room temperature)
1⁄2 t Vanilla extract
Instructions
  1. Sift the dry ingredients together.
  2. Cut in the butter and cream cheese until it resembles coarse bread crumbs.
  3. Knead briefly on a cool board.
  4. Wrap and chill until needed, at least 45 minutes.
Notes
This uses no water! And it is delicious.
