Shrimp in Orange Sauce

"shrimp in Orange sauce"Here's another unexpected and delicious flavor combination from Italy, somewhat Americanized. The original Italian recipe, gamberoni all'arancia in padella, used olive oil instead of butter, used bigger shrimp, it skipped the brief marination step, and it did not include the orange zest. I tried it that way first, but then I did it this way and we both liked it better. I think the shredded orange zest makes it more pretty, too.

This recipe is quick and easy, with no strange ingredients or tricky techniques, which makes it a good choice for a work night dinner.

Ingredients
1 Orange
16 oz Jumbo shrimp (16-20)
4 T Butter (Unsalted)
1 clv Garlic (crushed)
4 Sage Leaf
1⁄2 c Dry White Wine
Instructions
  1. Zest the orange, then squeeze the juice into a bowl.
  2. Clean the shrimp and put them in the bowl of juice to marinate for a little while.
  3. Chop the orange zest into thin shreds.
  4. In a skillet that you can cover, melt the butter until it foams.
  5. Add the crushed garlic and the sage leaves to flavor the butter.
  6. Take the shrimp from the bowl and saute them in the flavored butter until seared on both sides.
  7. Add the white wine to the pan and let it cook down.
  8. Add the orange juice and the chopped zest, cover and cook a few minutes until the shrimp are done.
  9. Remove the shrimp to a serving dish and turn the heat to very high. Boil down the cooking juices to a sauce.
  10. Pour the sauce over the shrimp and serve hot.
Notes

This sauce is good with rice or pasta.
