This simple and flavorful recipe works with any white fish, including halibut and swordfish. It's great for a weeknight because it's easy, and while it's not as quick as some other recipes, you don't have to hang over the pan the whole time.

4 TOlive oil
1⁄2Onion (chopped)
1 clvGarlic (chopped)
1Parsley sprig (chopped)
14 ozdiced tomatoes (drained)
2 TCapers (rinsed)
16 ozHaddock
Instructions
Heat the oil in a skillet large enough to hold everything. Cook the onion, garlic, and parsley for about 10 minutes until the onion is soft and golden.
Add the tomatoes and capers and cook five minutes more. If you think it needs salt and pepper, add them now.
Add the fish, cover, reduce the heat, and cook until the fish is done, about 30 minutes depending on its thickness.
Move the fish to a serving platter and surround it with the sauce.
