Farfalle ai Gamberi

Description

Shrimp & ButterfliesThis is a popular combination: shrimp and peas on pasta in a light butter-white wine sauce.

It cooks up quickly and you can use frozen peas and shrimp and dried pasta so it's one of those recipes that you can whip up on short notice, and it makes an easy weeknight dinner.

Ingredients
4 oz Farfalle pasta
2 T Olive oil
1 Shallot (chopped)
8 Large Shrimp
1 c Frozen Peas
4 oz Dry White Wine
1 Parsley sprig (chopped)
Instructions
  1. Boil the pasta water and cook the pasta.
  2. In a large skillet, heat the oil and saute the shallot until soft.
  3. Add the shrimp and cook on both sides until nearly done.
  4. Add the peas right from the bag. Any ice crystals are OK. Add the wine, cover and cook for 2 minutes more.
  5. Uncover, reduce the heat, and wait for the pasta to finish cooking.
  6. Add the butter and the cooked pasta, and toss it all together. Transfer to a serving platter, sprinkle with the chopped parsley, and serve hot.
