Trout Amandine

"Trout Amandine"We love fresh trout. This is an easy and delicious recipe for a weeknight. You can use either slivered almonds (shown here) or sliced almonds. The slivered ones retain more crunch and less of the buttery goodness, so it's easy to choose.

Ingredients
4 T Butter (Unsalted)
6 Sole Fillets
1⁄2 c Slivered or sliced almonds
Instructions
  1. Melt 2T of the butter in a skillet and toss the almonds in it until they start to brown.
  2. With a slotted spoon, take out the buttery toasty almonds and saute the fish 2-4 minutes per side depending on their thickness.
  3. Put the sole on a platter and cover with a landslide of buttery almonds, serve hot with a dry Meursault or Sauvignon Blanc.
