"Braised Red Cabbage"Here's a festive-looking and flavorful Christmas dish from Sweden that we served on the Julbord at our Swedish Christmas Dinner in December 2022. It includes red cabbage, apples, raisins, lingonberry jam, and other goodness.

This dish is good both hot and cold, and in Sweden is sometimes served on a sandwich.

This is one of those dishes that's better cooked ahead of time to let the flavors come together. It stores well and reheats easily.

Ingredients
1 Red Cabbage
2 Tart Apples
1 Onion (chopped)
1⁄4 c Red Wine Vinegar
1⁄2 c Lingonberry Jam (or cranberry jelly)
1⁄4 c Raisins
1 t Caraway Seeds
3 Juniper Berries
3 Allspice Berries
1 t Coarse Sea Salt
1 Bay Leaf
1⁄2 t Dried Thyme
1⁄2 t Ground Black Pepper
Instructions
  1. Pick off any damaged outer leaves from the cabbage, then cut it into wedges and remove the stalk. Shred by hand or in a food processor. Transfer to a large saucepan.
  2. Core the apples, but leave the skins on. Cut into chunks and add to the saucepan.
  3. Stir in the rest of the ingredients.
  4. Bring to a simmer over medium heat, stirring from time to time. Simmer for an hour on low heat. If it starts to dry out, add a little water.
  5. Simmer for another 30 minutes or so, until the cabbage is tender and jammy, but don’t worry about the time too much as it will withstand being cooked for 2 or 3 hours.
