French Potato Salad

Description

The Pommes de Terre a L'Huile (French potato salad), uses no mayonnaise. The potatoes are boiled and sliced, and then marinated in dry white wine while still warm and soft, so they absorb the wine. They are then dressed with a simple vinaigrette and served while still warm or later, chilled. 

This recipe is used in the Salade Nicoise.

Ingredients
2 lb boiling potatoes (scrubbed, unpeeled)
4 T Dry White Wine
1⁄2 c Sauce Vinaigrette (see recipe)
2 T Shallot (minced)
Instructions
  1. Boil the potatoes until tender.
  2. Plunge them into cold water and peel off the skins, then slice them thinly and lay them flat in one layer in a pan. Sprinkle all over with dry white wine and allow to sit a few minutes to absorb the wine.
  3. When the wine has been absorbed, pour over the Sauce Vinaigrette and gently toss to get both sides of the potatoes dressed with the vinaigrette.
  4. Either serve warm dressed with chopped parsley and other herbs, or else transfer to a bowl and chill until ready to use.
