"Stewed Green Peas"Here's another of the homey-cozy-cold weather dishes that make up the Swedish Christmas julbord: stewed green peas made from dried peas. It's not pretty, but it tastes good and it's a good winter warmer. 

I think of this dish like mashed potatoes, boiled rice, or polenta, a starch backdrop to the rest of the meal. Nevertheless, like many Swedish dishes, I think this one would appeal better to American tastes with a little more seasoning, or some tweaks to the cooking. I added my thoughts in the Notes, below. I hope I don't get in trouble with the Swedish Food Police!

Ingredients
9 oz Dried Green Peas, whole
4 T Butter
1 pn Sugar
Instructions
  1. In a large bowl, cover the dried green peas with plenty of cold water and soak overnight.
  2. Drain the peas, place in a medium saucepan, and add water, about 1 cm above the peas, and a little salt. Cover with a lid and bring to a boil.
  3. Once boiling, tilt the lid slightly to allow steam to escape, reduce the temperature and gently simmer for 1 hour or until tender and most of the water has evaporated, but a little water remains.
  4. Add the butter and sugar and stir until the peas break up and thicken a bit, adding a little water if the mixture is too thick. Season well with salt and pepper and serve immediately.  
Notes

The next time I might try cooking these in ham stock from the julskinka, and maybe a mix of butter and bacon fat. I might use brown sugar instead of white to see if that makes a difference.
