Genoise Butter Cake

Description
This is a part of the Buche de Noel Recipe. It is used in many other classic cake recipes as well.

Preparation time
1 hour
Ingredients
6 Eggs (at room temperature)
1 c Sugar
1⁄2 c Clarified Butter (at room temperature)
1 t Vanilla extract
1 c Cake Flour (sifted)
Instructions
  1. Preheat oven to 350. Grease and flour a jelly-roll pan.
  2. Whip the eggs and sugar for 15 minutes, or until tripled in volume.
  3. Add the vanilla, then the butter and flour in equal parts at slow speed until well combined. Try to keep the volume high.
  4. Pour into buttered, floured jelly roll pan and bake until done, about 25 minutes (but pay attention!)
  5. Turn out onto an impeccably clean linen towel and dust with confectioner's sugar.
