I got this recipe from a peach cobbler recipe at Allrecipes.com, but it's good for other cobblers as well.

Ingredients
1 cFlour
1⁄4 cSugar
1⁄4 cBrown Sugar
1 tBaking Powder
1⁄2 tSalt
6 TButter (Unsalted) (chilled and diced)
1⁄4 cBoiling Water
Instructions
Put the water on to boil.
Combine the remaining ingredients as if making a pie crust - cutting in the butter until it's like coarse cornmeal.
Add the boiling water and stir lightly until it makes a thick paste, but not too heavy.
Dot this with a spoon over the hot filling before returning it to the oven for final baking. Put spoonfuls opposite each other and sometimes around the center to get even coverage.
