- The Cassoulet Toulousaine is based upon duck confit with not-garlicky Saucisse Toulousaine and some other pork.
- The Cassoulet of Castelnaudary is pork-based with some garlicky pork sausage and sometimes duck confit.
- The Cassoulet Carcassone is mutton-based.
