Eton Mess

We were in Ireland in 2016 during the time that strawberries were being harvested in Wexford. They were available all over Ireland, fresh and flavorful, and this rapidly became Lorna's favorite dessert. If I remember correctly, she had it in Kilkenny, Waterford, Bantry, Galway, Derry, Belfast, and Dublin!

You really have to make this with local strawberries, because the flavors are few and delicate, and the perfume of a truly fresh strawberry brings an ethereal specialness that you just can't get from those little plastic horrors that come from California in November.

I like to garnish it with fresh mint leaves and toasted almonds, but that's optional. 

You can make your own meringue, but drying the meringue is very time consuming, especially on a humid July day. You can buy decent meringues at a bakery and save all of that time.

Ingredients
16 oz Strawberries
2 T Sugar
16 oz Heavy Cream
1 t Vanilla extract
4 oz Meringues
Instructions
  1. Slice the strawberries, then divide them into two parts, the prettiest ones in one bowl and the rest in another.
  2. Sprinkle the less-pretty strawberry slices with 1 tablespoon of the sugar, then puree them in a food processor.
  3. Whip the cream with the vanilla and the other tablespoon of sugar until stiff.
  4. Crush the meringues. Set aside the biggest fragments and stir the rest into the whipped cream.
  5. Assemble the Mess in individual parfait glasses or in a trifle dish: the cream with crushed meringue first, then stir in a bold swirl of strawberry puree, then garnish with the pretty slices of strawberry and the bigger bits of meringue.
  6. Chill until ready to serve, but not so long that the crushed meringue dissolves.
  7. Serve chilled.
Notes
This deserves fresh Jersey cow cream, if you can get it! I have found it widely available from Butterworks Farm in Vermont and at the huge Coop in Hanover, NH, and from indie farms at the Coop in Belfast and at Bow Street Market in Freeport Maine. Maybe you can get it now at Whole Foods?
