Description

Swedish Rice PuddingThis is a simple and delicious Swedish rice pudding, usually served with raspberries or lingonberry preserves.

This is often served at Christmas time, with an almond hidden inside as a symbol of good luck for the one who gets it.

Yield
4 Servings
Preparation time
1 hour, 30 minutes
Ingredients
5 oz rice (short-grain)
1 1⁄4 c Water
1⁄2 t Salt
3 c Milk
1 Cinnamon sticks
1 1⁄2 T Sugar
1 T Butter (Unsalted)
Instructions
  1. Bring the water to a boil.
  2. Add the salt and rice. Reduce the heat and simmer for 10 minutes.
  3. Add the milk and the cinnamon stick and stir well.
  4. Cover the pot and turn the heat very low. Cook over low heat until all the milk is absorbed, 30 to 45 minutes.
  5. Once the milk has been absorbed, remove from the heat and leave covered for another 10 minutes. Then stir in the sugar and butter.
  6. Serve lukewarm with lingonberries or dusted with ground cinnamon. At Christmas, hide an almond in the pudding before serving.
Notes
If the rice burns to the bottom of the pot, gently remove the unburnt part and finish cooking. Do not scrape up any of the burned rice.
