Blueberry Slump

Blueberry Buckle

This easy crowd-pleaser is known variously across New England as Blueberry Buckle, Blueberry Cobbler, Blueberry Slump, and Blueberry Grunt. The basic idea is simple: a bed of berries topped  with sweet biscuit dough and baked until the berries burst into a delicious sauce for the tender biscuits.

This is great hot with ice cream, or cool with whipped cream.  Make it with wild Maine blueberries if you can, especially while they are in season in August.

Blueberry slump is very easy to make; this one was made at work in the Actifio Food Truck by my friends Debbie Goswami and Chandrika Venkatraman.

Ingredients
4 c Flour
4 T Sugar
8 T Butter (Unsalted) (diced)
1 t Salt
1 T Baking Powder
1 1⁄4 c Milk
4 c Maine blueberries
Instructions
  1. Preheat the oven to 400.
  2. Combine the dry ingredients.
  3. Cut in the butter as when making a pie crust, until the mixture resembles cornmeal in texture.
  4. Mix in the milk, stirring just until mixed to form a soft dough.
  5. Butter a 9x11-inch baking pan and fill it with the berries.
  6. Form the biscuit dough into small balls and roll in extra granulated sugar, if you like. Gently flatten the balls and arrange them over the berries about 3/4-inch apart. Sprinkle a little more sugar, if you like.
  7. Bake for about 15 minutes, or until the berries are bubbling and the biscuits are browned.
