Andouille with Potatoes and Cream

"Andouille sausage with potatoes and cream"This is a hearty winter dish, bursting with flavor and calories! I think this would be good after shoveling snow for an hour. It's quite easy, you just boil potatoes and then simmer them in cream and top with cooked andouille sausage. The andouille is spicy (especially if you use an American Cajun variety), but the cream and the potatoes moderate the punchiness to a fine degree; this is easy to gobble down more than you should.

Ingredients
1 lb boiling potatoes
2 T Butter (Unsalted)
1 small onion (sliced)
1 lb Andouille Sausage (sliced)
1 pt Heavy Cream
Instructions
  1. Boil the potatoes in their skins until tender, then drain them and plunge them into cold water. Now you can pretty easily slip the skins away. Slice the potatoes.
  2. Preheat the oven to 350.
  3. Over moderate heat, melt the butter and cook the onions until translucent. Cook the sliced andouille until it gets some color, then remove the sausage from the pan, letting the onions remain.
  4. Stir in the cream and bring it to a boil. Reduce it by 1/3, then stir in the sliced potatoes. taste and add salt as needed.
  5. Dot the top with the sliced andouille and bake for 10 minutes. Serve hot with a good statin ;-).
Notes

Some recipes include cheese. I see no need for that, certainly not packaged grated cheese.
