Ham Salad

Description
Piquant Ham Salad

This is a piquant and flavorful salad suitable for canapes and finger-sandwiches.

If you want to have it in larger servings, say on a sandwich for lunch, then you might consider cutting back on the capers, pickles, and dry mustard, or esle have it with a full-flavored bread like a pumpernickel or a Russian black bread. 

This is a good combination with the Potato-Caraway Bread.

Preparation time
20 minutes
Ingredients
1 c Mayonnaise
1 t dry mustard
2 T Capers (chopped)
4 T Dill Pickle (chopped fine)
4 T Celery (chopped fine)
1⁄2 Onion (minced)
1 Apple (chopped fine)
16 oz Ham (chopped)
Instructions
Mix the mustard into the mayonnaise. Combine all remaining ingredients except the ham to make a dressing. Reserve a little of the onion and the celery. Grind the ham with the reserved celery and onion in the food grinder. Mix the ground ham mixture with the dressing. Chill until ready to use.
Notes
I like to put it on rye toasts with thin slices of Maine Mustard Pickle or Ruuska's Sour Pickles as a canape, and serve them with chilled vodka!
