Tropea is in southern Calabria, way down near the toe of the Italian boot. It is especially known for red onions of unexcelled sweetness and mildness.

1 TButter
1⁄2Red Onion (thinly sliced)
4Eggs (Beaten)
Instructions
Melt the butter in an omelette pan, then cook the onions until very soft.
Add the beaten eggs and stir them well with the onions.
Cook gently for a few minutes until set, then turn it over by sliding the frittata onto a plate and then flipping it back into the pan.
In a few minutes it will be fully cooked. Serve hot.
Notes
An omelette pan has shallow sides that allow you to slide the frittata onto a plate. If you have only a steep sided pan, it may be easier to finish the frittata in the oven.
