Here's a surprisingly simple, delicious pie for luncheon or breakfast that you can whip up in under an hour. It works best if all ingredients are at room temperature when you begin.

Ingredients
1Pie Shell, Half-Baked
2Eggs
2egg yolks
1 cHeavy Cream
1 cMilk
1⁄2 tSalt
1 pnWhite Pepper
1 pnNutmeg (grated)
Instructions
Preheat the oven to 375.
Pre-bake the pie shell for 8-9 minutes.
Beat together the eggs and the egg yolks, then stir in the cream, milk, salt, pepper, and nutmeg.
Grate the cheese and stir it into the egg mixture.
When the pie shell is ready, add the filling and bake for 25-30 minutes, until puffy and lightly browned on top. A knife inserted into the center should come out clean.
Notes
I like to shave off a little of the cheese to use as a decoration on top.
