Here's a surprisingly simple, delicious pie for luncheon or breakfast that you can whip up in under an hour. It works best if all ingredients are at room temperature when you begin.
1 Pie Shell, Half-Baked
2 egg yolks
1 c Heavy Cream
1 c Milk
1⁄2 t Salt
1 pn White Pepper
1 pn Nutmeg (grated)
- Preheat the oven to 375.
- Pre-bake the pie shell for 8-9 minutes.
- Beat together the eggs and the egg yolks, then stir in the cream, milk, salt, pepper, and nutmeg.
- Grate the cheese and stir it into the egg mixture.
- When the pie shell is ready, add the filling and bake for 25-30 minutes, until puffy and lightly browned on top. A knife inserted into the center should come out clean.
I like to shave off a little of the cheese to use as a decoration on top.
