Yield 3 Cups Preparation time 20 minutes Ingredients 1 Pineapple (peeled) 1 Red Onion 3 Jalapeno Chile Pepper 1 Lime (juice of) Instructions Slice the pineapple into 1/2-inch slices and put on hot grill for roughly 5 minutes on each side until grill marks are present. Slice the onion into 1/2-inch thick slices and put it and the jalapenos on the grill for 3 to 4 minutes on each side. Peel the skin off of the peppers. Dice the pineapple and onion. Mince the jalapenos. Toss them all in a bowl. Add lime juice and drizzle with e.v.o.o. Season with salt and freshly ground black pepper.
