By Anonymous, 13 May, 2014 Description My co-worker XD makes this for some of our famous potluck lunches at Actifio. It is colorful, delicious, and it packs a wicked zing! Yield 12 Servings Preparation time 45 minutes Ingredients 3 Mangoes (ripe) 1 t Coriander (ground) 1 bn Cilantro (small) 1 clv Garlic 1 Shallot (small) 1 Lime 3 Habanero Peppers 5 Jalapeno Chile Pepper 1 Tomato (medium, ripe) 1 t Black Pepper (fresh ground) Instructions Peel mango and dice into small cubes. Dice tomato into small cubes. Take seeds out of jalapeño and habanero, finely chop the peppers. (Don't rub your eye while doing this, it's going to be really painful if you do). Put diced mango, tomato and chopped peppers into a mixing bowl. Roll the lime on the chopping board with your hand, then cut it in half and squeeze the lime juice into the mixing bowl and mix with the ingredients. Chop the shallot and garlic, placing them in the mixing bowl. Chop the cilantro, mix with all the ingredients.Add black pepper, coriander, and sea salt to taste.
