This is used in some recipes, but it is also a delicious local treat on toast or on a grilled steak.

1Lobster Coral (the waxy red eggs)
1Butter (Unsalted)
Instructions
1. Pound the coral with a mortar and pestle until smooth and pasty.
2. Combine with an equal quantity of good butter.
That's all there is to it. Refrigerate until needed. Awesome on a steak!

Whenever you cook lobsters, if you find some coral, make this venerable compound butter. It won't be long before you consider buying lobsters just in the hope of scoring some coral for lobster butter!
