High & Mighty Two-Headed Beast with Polish Sausage and Smoked Cheddar

The Two-Headed Beast needs meatI got the High & Mighty Two Headed Beast at the Spirithaus in Amherst.

I could see that this stout beast would not be right with our typical fish dinner, so I stopped at the Baltic European deli in South Boston on the way home from work for proper victuals. The selected match for the stout: a Lisiecka Polish sausage (a hearty, unsmoked kielbasa) and a smoked cheddar from the geniuses at the Fox Country Smokehouse in Canterbury, NH.

It was a great combination. The beer is complex and richly flavored, hoppy enough to penetrate the fats of the cheese and sausage, robust enough to complement the smoked cheddar and seasoned pork. In fact, I may set the same combination out tonight down at the Old Colony Club, if I can find the beast this far from its Pioneer Valley home!
