Ingredients

1eaPineapple (peeled)
1eaRed Onion
3eaJalapeno Chile Pepper
1eaLime (juice of)

Instructions

  1. Slice the pineapple into 1/2-inch slices and put on hot grill for roughly 5 minutes on each side until grill marks are present.
  2. Slice the onion into 1/2-inch thick slices and put it and the jalapenos on the grill for 3 to 4 minutes on each side.
  3. Peel the skin off of the peppers.
  4. Dice the pineapple and onion. Mince the jalapenos.
  5. Toss them all in a bowl. Add lime juice and drizzle with e.v.o.o. Season with salt and freshly ground black pepper.
