Sauce a la Belle Indienne

the Sauce to accompany the Royal Pudding a la Belle Indienne

Preparation time
10 minutes
Ingredients
1 c Butter (Unsalted)
3⁄4 c Dark Brown Sugar
1⁄4 c Ground Almonds
1⁄4 t almond extract
3⁄4 c Heavy Cream
333⁄1000 c Rum (Medium-dark)
Instructions
Cream butter with brown sugar and ground almonds. Whip until fluffy. Ser over a double boiler to soften further, Add remaining ingredients and whip until very fluffy. Serve with Royal Pudding a la Belle Indienne.
Notes
This is not hard sauce - it is served soft and even runny.
