Greek Tomato Salad

By John, 15 August, 2013
Description
John's Greek Tomato Salad

I had this in Greece long ago, but the memory stays with me. I make it every August when there are fresh tomatoes, and I always use the Dodonis Feta from Bahnan's Market.

I remember riding in a car north on a highway, through farm country toward Bulgaria, and coming in the other direction were 18-wheel dump trucks filled with tomatoes. They must have been in containers, but the top containers were open to the sky. Every time a truck hit a bump, some tomatoes would bounce out of the truck and splat on the road, so the southbound lane of the highway was covered with splashes of red tomato baking in the August sunshine.

Yield
4 Servings
Preparation time
15 minutes
Ingredients
8 oz Tomato (fresh, diced)
8 oz Dodonis Feta (diced)
3 oz Extra-Virgin Olive Oil
1 T Oregano, Fresh (most chopped, some whole for garnish)
Instructions
Combine all ingredients, garnish with oregano and black olives if you have them. It probably needs no salt.
