Description

This fabulous concoction goes with the Capon Maggro.

Ingredients

1ozcrustless Country Bread (soaked in vinegar)
4TWine Vinegar (for soaking the bread)
1⁄2cParsley, Flat-Leaf
1clvGarlic
2TCapers (Rinsed and Drained)
1ozAnchovies (Rinsed and Drained)
4TPine Nuts
2eaYolks of Hard-Cooked Eggs
6eaOlives, Green (Pitted)
5ozExtra Virgin Olive Oil

Instructions

Chop everything and whir it in a food processor, adding the oil slowly as for a mayonnaise. Add ground black pepper and more vinegar as needed to make it quite piquant.

Consider doubling this recipe - it is soooo good!
