Description

This Russian pastry is essentially a basic pie crust with a little baking powder, and sour cream and egg yolks instead of water.

This recipe is used in the showstopper Kulebiaka

Ingredients

3cFlour
3⁄4tSalt
1⁄2tBaking Powder
14TButter (Unsalted)
2⁄3cSour Cream
2eaegg yolks (lightly beaten)

Instructions

  1. Combine the dry ingredients.
  2. Add the butter as for a Basic Pie Crust.
  3. Combine the sour cream and egg yolks and then add the mixture to the flour-butter mixture.
  4. Knead gently for 30 seconds. Do not overwork the dough.
  5. Chill before using.
