Polish Sausages

KielbasaName: Polish Sausages

Found at: the Baltic European Deli, Dorchester, MA

This image shows four types of delicious Polish sausages, served with an Allagash White Ale. Clockwise from the top:

  • Black Salceson - A head cheese made dark with pig blood, excellent with the white ale. 
  • Smoked Liverwurst - Deliciously unctuous, but not so complementary with the spicy white ale.
  • Kabanoszy - A skinny dried pork sausage with a lightly smoked mild flavor, delicious with the ale, and a great lunch on the trail.
  • Podhalanska - A smoked kielbasa, lightly seasoned. Great with the ale.
  • These are traditionally accompanied by any number of flavorful mustards that you can find at a good Polish deli (like the Baltic European Deli, where I got these sausages), but you could also be very happy with some of the awesome concoctions created by Worcester's Dr Gonzo.
