Peach Shortcake

By John, 21 August, 2013
Description

Peach Shortcake at the officeThis is really easy! I made these at work. We are fortunate to have an electric convection oven (no venting required) so we can make all sorts of awesome goodies to keep the minions fed and productive. At home, well you could almost do it in your sleep!

Yield
8 Servings
Preparation time
20 minutes
Ingredients
1 Wicked Easy 15-minute Scones
8 Peaches (Sliced into eighths)
1 T Sugar (sprinkled on the peach slices)
1 pt Heavy Cream (thickened or whipped)
Instructions
  1. Make the biscuits.
  2. While they are baking, slice the peaches and sprinkle with 1 T sugar to make them glisten.
  3. Whip or thicken the cream by shaking. Sweeten to taste (not really - if the peaches are fresh then no sugar is needed).
  4. Split the biscuits, then add peaches and cream until you are happy.
