Allspice Dram

Allspice DramAllspice Dram, formerly known by the less-appealing name Pimento Dram, is a wicked concoction of allspice and pepper in a rum base. It is pricey and best used sparingly both in a drink and in how often such drinks are served, so a bottle lasts a long time.  

I have seen the 750-ml bottle shown here for about $50 and a 375-ml bottle for $29.99.

Allspice Dram has a rich, somewhat hot flavor that goes well with lime. It is fairly dark in color, so whhile it may make an interesting ingredient to play with, the color may limit its utility.

I had it in a Lion's Tail at Drink in Fort Point, and it was delicious, even thrilling. But it is not something to have every day.

Allspice Dram is unlike anything else in my cabinet. I can't say I like it, but it has its uses, and when it is called for, I think nothing else wil substitute for it.
