Description

Steamed little potatoes go with all kinds of European cold-weather dishes. They are easy to make and fast. They keep well and can be microwaved to good effect. The skins are tender, so the potatoes do not have to be peeled.

Ingredients

12eaNew Potatoes (Red Bliss or Yukon Gold are good)
2TButter
1TSalt
1TChopped Parsley

Instructions

Set the potatoes in a steamer basket over an inch of boiling water and steam for 12-15 minutes, or until tender. Serve whole or broken with butter, salt, and parsley.
