Description

This is a part of the Buche de Noel Recipe. It is used in many other recipes as well.

Ingredients

6eaEggs (at room temperature)
1cSugar
1⁄2cClarified Butter (at room temperature)
1tVanilla extract
1cCake Flour (sifted)

Instructions

  1. Preheat oven to 350. Grease and flour a jelly-roll pan.
  2. Whip the eggs and sugar for 15 minutes, or until tripled in volume.
  3. Add the vanilla, then the butter and flour in equal parts at slow speed until well combined. Try to keep the volume high.
  4. Pour into jelly roll pan and bake until done, about 25 minutes (but pay attention!)
  5. Turn out onto an impeccably clean linen towel and dust with confectioner's sugar.
